Blueberry muffings are a great way to enjoy a delicious snack without the guilt of trying to get everything in one bite.

Enjoy the recipe below: Blueberry Muffins recipe (makes 1 dozen) 3 cups all-purpose flour 2 tablespoons baking powder 1 teaspoon salt 1/2 teaspoon baking soda 1/4 teaspoon salt 2 tablespoons butter, room temperature 3 eggs 1/3 cup unsalted butter, melted 1 cup sour cream 2 tablespoons sugar 3/4 cup packed light brown sugar 2 tablespoons blueberries 1 cup unsweetened blueberries Directions Preheat oven to 350 degrees F. Mix together the flour, baking powder, and salt.

Add the butter and stir to combine.

In a large bowl, combine the eggs and sour cream.

Add sugar and blueberries to the egg mixture.

Add melted butter to the flour mixture and stir.

Slowly add the flour to the batter until a dough forms.

Roll out the dough into a 9-inch rectangle and flatten with your hands.

Cut the dough in half lengthwise.

Cut out 8 muffins about 1/8-inch thick.

Heat a large skillet over medium-high heat.

Once the skillet is hot, place the muffins in it.

Cook the muffin dough for about 4 to 5 minutes on each side.

The muffins will crisp up a bit when they’re done cooking.

Flip them over to cook the other side.

Serve immediately.
