Polenta can be made with just about anything, but it can be especially delicious when cooked with chicken, as this recipe shows.

This recipe calls for fresh eggs, but you can substitute regular eggs for the white.

If you don’t have eggs, substitute white and blue cornmeal.

To prepare the polenta, heat 1 tablespoon of oil in a large skillet.

Once the oil is hot, add the onion, bell pepper, garlic, parsley, and thyme.

Saute for about 5 minutes.

Add the chicken, then cover and cook for about 15 minutes, until the polka dots start to become translucent.

Flip the polsaets and cook another 5 minutes, or until the chicken is cooked through.

Serve warm or at room temperature.
